Hearty Beef Stew

  • 2 pounds [900 g] stew meat, into 1-inch [2.5-cm] cubes
  • 3 peeled potatoes, diced
  • 3 peeled carrots, sliced
  • 1 medium onion, diced
  • 2 [14 1/2-ounce / 412-mL each] cans whole tomatoes
  • 4 tablespoons [60 mL] quick-cooking tapioca
  • 2 bay leaves
  • Salt and pepper, to taste
  • Trim all fat from meat cubes.
  • Transfer all ingredients into a slow cooker; mix thoroughly.
  • Cover and cook on 'LOW', for 8 to 10 hours.
