- 6 cups [1.5 L] unsweetened peach*
- 3 cups [600 g] sugar
- 1 1/2 cups [375 mL] apricot nectar
- 30 mL [2 tablespoons] orange or lemon juice
- 1 teaspoon [5 mL] vanilla

- *Peel, stone then puree peaches through food mill or into a food processor.
- Mix together pureed peaches, sugar, apricot nectar, orange or lemon juice and vanilla; pour into a crock pot.
- Bring to a good boil, uncover and boil until thick or for approximately 4 hours, on high or low to keep mixture boiling.
- Pour into hot sterilized jars, and seal.
