Peach Butter
  • 6 cups [1.5 L] unsweetened peach*
  • 3 cups [600 g] sugar
  • 1 1/2 cups [375 mL] apricot nectar
  • 30 mL [2 tablespoons] orange or lemon juice
  • 1 teaspoon [5 mL] vanilla
  • Hot sterilized jars
  • *Peel, stone then puree peaches through food mill or into a food processor.
  • Mix together pureed peaches, sugar, apricot nectar, orange or lemon juice and vanilla; pour into a crock pot.
  • Bring to a good boil, uncover and boil until thick or for approximately 4 hours, on high or low to keep mixture boiling.
  • Pour into hot sterilized jars, and seal.
