Gazpacho Soup
Comments: Serve this soup really cold, each serving garnished with a celery stalk or croutons.
IngredientsPreparation
  • 2 ripe tomatoes, peeeled
  • 1 cucucumber, peeled
  • 1/4 cup [60 mL] sweet green pepper dices
  • 1/4 cup [60 mL] onion dices
  • 1 cup [250 mL] tomato juice
  • 2 tablespoons [30 mL] olive oil
  • 1 1/2 teaspoons [7.5 mL] vinegar or, better, red wine
  • 1 drop Tabasco sauce
  • Minced garlic, to taste
  • Salt and pepper, to taste
  • Into a blender, well mix together all ingrédients until smooth.
  • Refrigerate soup until really cold, before serving.
