Vegetable Tempura

  • 2 eggs, beaten
  • 2 teaspoons [10 mL] soy sauce
  • 3/4 cup [190 mL] water
  • 1 cup [140 g] flour
  • 1/4 teaspoon [1 mL] salt
  • Freshly peeled vegetables, cut into bites
  • At least 1 inch [2.5 cm] deep hot frying oil
  • Beat together beaten eggs, soy sauce and water.
  • Slowly stir in flour and salt; beat until smooth.
  • Dip vegetable pieces into dough until well coated.
  • Fry vegetable pieces into hot oil for 5 to 10 minutes, until done to taste.
