Rice and Broccoli Dish
Comments: If desired, also mix in some chopped drained oil-packed sweet red pepper, and slivered almonds.

  • Butter
  • 10 ounces [284 mL] frozen chopped broccoli, thawed
  • 1/2 cup [125 mL] chopped celery
  • 1/2 cup [125 mL] chopped onion
  • 1 cup [250 mL] rice, boiled then drained
  • 1 small jar cheesespread
  • 1 [10-ounce / 284-mL] can cream of mushroom soup concentrate
  • Preheat oven to 375°F [190°C].
  • Stir-fry together thawed chopped broccoli, chopped celery and chopped onion into some melted butter.
  • Mix in drained boiled rice, cheesespread and cream of mushroom soup concentrate.
  • Evenly pour mixture into a bread pan.
  • Bake into preheated oven, for 30 minutes.
