Pasta 'alla arrabiata'

  • 1 clove garlic, minced
  • 1/4 cup [60 mL] olive oil
  • Approximately 2 tablespoons [30 mL] crushed chiles, or to taste
  • 28 ounces [796 mL] canned tomatoes, crushed
  • 1 [8-ounce / 227-mL] can tomato sauce
  • 1 pound [454 g] pasta noodles, such as 'ziti'
  • Into a casserole, lightly brown minced garlic into hot olive oil, mixing in crushed chiles as soon as garlic just starts to brown.
  • Then mix in crushed tomatoes and tomato sauce.
  • Simmer mixture for 30 to 40 minutes, stirring from time to time, making sure that mixture just boils at all times.
  • Boil pasta noodles into boiling salted water until done; drain, then transfer noodles into a large servong bowl.
  • Pour sauce all over pasta noodles.
  • Leave to rest for 5 to 10 minutes, uncovered, before serving.
