Texan-Style Stew

  • 1 pound [454 g] ground beef
  • 3 large onions, sliced
  • 1 large sweet green pepper, membranes and seeds removed, chopped
  • 1 [16-ounce / 454-mL] can tomatoes
  • 1/2 cup [125 mL] raw white rice
  • 2 teaspoons [10 mL] salt
  • 1 to 2 teaspoons [5 to 10 mL] chili powder
  • 1/8 teaspoon [0.5 mL] pepper
  • Preheat oven to 350°F [180°C].
  • Into a frypan, stirring, brown together ground beef, onion slices and chopped sweet green pepper to soften vegetables.
  • Drain off fat.
  • Stir in tomatoes, rice, salt, chili powder and pepper; heat until hot.
  • Pour mixture into a greased 8-cup [2-L] oven-safe casserole.
  • Cover and bake into preheated oven, for 1 hour.
