Sausage Corn Bread Casserole

  • 1 1/2 cups [375 mL] corn flour with baking powder
  • 3 tablespoons [45 g] sugar
  • 1 teaspoon [5 mL] pepper flakes
  • 1/2 onion, chopped
  • 3/4 cup [175 g] grated Cheddar cheese
  • 1/2 cup [125 mL] creamed corn
  • 1 egg
  • 3/4 cup [190 mL] buttermilk
  • 1 pound [454 g] fried beef, beef and pork or pork sausages, well-drained
  • Preheat oven to 350°F [180°C].
  • Mix together corn flour, sugar, pepper flakes, chopped onion, grated Cheddar cheese, creamed corn, egg and buttermilk.
  • Mix in drained sausages.
  • Pour into a 7 x 11-inch [18 x 28-cm] baking pan.
  • Bake into preheated oven for approximately 40 minutes, until golden, before serving.
