Peanut Butter Marshmallow Vanilla Fudge [microwave]

  • 3 cups [600 g] sugar
  • 3/4 cup [190 mL] evaporated milk
  • 1/4 pound [113 g] butter
  • 1 cup [250 mL] peanut butter
  • 1 [7-ounce / 200-mL] jar creamy marshmallow
  • 1 teaspoon [5 mL] vanilla
  • Into a large microwave-safe bowl, mix together sugar, evaporated milk and butter.
  • Microwave for 3 minutes, on 'HIGH'.
  • Remove from oven; mix well.
  • Microwave for 3 minutes longer, still on 'HIGH'.
  • Remove from oven; mix well.
  • Microwave for 3 minutes longer, still on 'HIGH'.
  • Well mix in peanut butter, creamy marshmallow and vanilla.
  • Pour into a buttered glass pan.
  • Refrigerate until hardened before cutting, into squares.
