Pork Chop Potato Casserole

  • 6 pork chops
  • 1 [10-ounce / 284-mL] can cream of celery or mushroom soup concentrate
  • 1/2 cup [125 mL] milk
  • 1/2 cup [125 mL] sour cream
  • 1 cup [250 mL] any grated cheese
  • 24 ounces [680 g] hashed brown potatoes
  • 1 can fried onion rings
  • Salt and pepper, to taste
  • Preheat oven to 350°F [180°C].
  • Into a frypan, brown pork chops on both sides; set aside.
  • Mix together cream of celery or mushroom soup concentrate, milk and sour cream; salt and pepper.
  • Mix in 1/2 cup [125 mL] of grated cheese, hashed brown potatoes and half of fried onion rings.
  • Evenly spoon mixture into a 9 x 13-inch [23 x 33-cm] pan.
  • Arrange reserved browned pork chops side-by-side all over mixture.
  • Cover and bake into preheated oven, for 40 minutes.
  • Sprinkle mixture with remaining grated cheese and fried onion rings.
  • Bake, uncovered for 5 minutes more, before serving.
