Easy Butterscotch Cookies

  • 12 Graham cookies, each cut into 4 squares
  • 1 cup [225 g] butter
  • 1/2 cup [100 g] sugar
  • 1 cup [250 mL] chopped nuts
  • 1 cup [250 mL] chocolate chips
  • Preheat oven to 325°F [160°C].
  • Line a 15 x 10 x 1-inch [38 x 25 x 2.5-cm] cake pan with buttered waxed paper.
  • Arrange cookie squares into lined cake pan.
  • Into a casserole, bring together butter and sugar to a boil over medium heat.
  • Leave to simmer slowly for 3 minutes.
  • Using a spoon, evenly coat cookie squares with mixture.
  • Sprinkle cookie squares with chopped nuts.
  • Bake into preheated oven, for 10 minutes; leave to cool.
  • Melt chocolate chips over low heat; pour melted chocolate all over cookies.
  • Leave chocolate to harden, then remove cookies from waxed paper.
