Poppyseed Muffins

  • 3/4 cup [150 g] sugar
  • 1/4 cup [60 g] butter, softened
  • 1/2 teaspoon [2.5 mL] grated orange rind
  • 2 eggs
  • 2 cups [280 g] flour
  • 2 1/2 teaspoons [12.5 mL] baking powder
  • 1/2 teaspoon [2.5 mL] salt
  • 1/4 teaspoon [1 mL] nutmeg
  • 1 cup [250 mL] milk
  • 1/2 cup [125 mL] golden raisins
  • 1/2 cup [125 mL] chopped pecans
  • 5 tablespoons [75 mL] poppyseeds
  • Preheat oven to 400°F [200°C].
  • Cream together sugar, softened butter and grated orange rind.
  • Beat in eggs, one at a time, beating well after each addition.
  • Into a clean bowl, mix together flour, baking powder, salt and nutmeg.
  • Add dry ingredients to eggs mixture alternately with milk, beating well after each addition.
  • Fold in golden raisins, chopped pecans and poppyseeds.
  • Spoon mixture into muffin tins, up to approximately 3/4th.
  • Bake into preheated oven, for 20 minutes.
