Mushrooms Stuffed with Cheese

  • 8 medium-size whole mushrooms
  • 1 tablespoon [15 mL] finely chopped sweet green pepper, membranes and seeds removed
  • 1 tablespoon [15 mL] minced green onion
  • 2 tablespoons [30 g] grated cheese [20% m.s.g. or less]
  • Pepper and salt, to taste
  • Preheat oven to 350°F [180°C].
  • Rinse and dry mushrooms.
  • Reserving caps, remove and finely mince stems.
  • Well mix in finely chopped sweet green pepper, minced green onion and grated cheese; salt and pepper.
  • Stuff mushroom caps with mixture.
  • Arrange stuffed mushroom caps onto an oiled cookie sheet.
  • Bake, uncovered into preheated oven, for approximately 15 minutes.
