- 8 medium-size whole mushrooms
- 1 tablespoon [15 mL] finely chopped sweet green pepper, membranes and seeds removed
- 1 tablespoon [15 mL] minced green onion
- 2 tablespoons [30 g] grated cheese [20% m.s.g. or less]
- Pepper and salt, to taste

- Preheat oven to 350°F [180°C].
- Rinse and dry mushrooms.
- Reserving caps, remove and finely mince stems.
- Well mix in finely chopped sweet green pepper, minced green onion and grated cheese; salt and pepper.
- Stuff mushroom caps with mixture.
- Arrange stuffed mushroom caps onto an oiled cookie sheet.
- Bake, uncovered into preheated oven, for approximately 15 minutes.
