Chicken Salad

IngredientsPreparation
  • 1 cup [250 mL] cooked chicken dices
  • 1 tablespoon [15 mL] raisins
  • 1/2 cup [125 mL] tiny celery dices
  • 1 green onion, minced
  • 1 carrot, grated
  • 4 cups [1 L] any lettuce, bites
Salad Dressing
  • 1 tablespoon [15 mL] olive, canola or other oil
  • 1 tablespoon [15 mL] lemon juice
  • 1 tablespoon [15 mL] light mayonnaise
  • 1 tablespoon [15 mL] freshly chopped ginger
  • 1/4 teaspoon [1 mL] garlic powder
  • Pepper and salt, to taste
  • Into a small bowl, beat together oil, lemon juice, mayonnaise, chopped ginger, garlic powder, salt and pepper of salad dressing.
  • Into a large bowl, mix together cooked chicken dices, raisins, celery dices, minced green onion, grated carrot and lettuce bites.
  • Pour in salad dressing.
  • Mix well.
  • Serve immediately.
