Homemade Mayonnaise

  • 1 really fresh egg
  • 1/2 teaspoon [2.5 mL] salt
  • 1/4 teaspoon [1 mL] dry mustard
  • Pinch of pepper
  • Pinch of onion powder
  • Pinch of garlic powder
  • 2 tablespoons [30 mL] lemon juice
  • 1 cup [250 mL] olive, canola or other oil
  • 1 cup [250 mL] plain yogurt [2% m.s.g. or less]
  • Into a blender, mix together egg, salt, dry mustard, pepper, onion powder and garlic powder, at low speed, until mixture starts to whiten.
  • Blender still running at low speed, very slowly pour in oil.
  • Be careful not to pour oil too fast, or mayonnaise will be liquid.
  • Mix in plain yogurt to get a light mayonnaise.
  • Serve.
