Vegetable Rice

  • 1 cup [250 mL] uncooked long grain rice
  • 2 cups [500 mL] any broth
  • 1 teaspoon [5 mL] olive or canola oil
  • 1/2 sweet green pepper, membranes and seeds removed, diced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 10 ounces [284 mL] fresh or canned mushroom slices
  • 1 clove garlic, minced
  • 1 green onion, minced
  • Pinch of savory
  • Pinch of thyme
  • Pinch of oregano
  • Pinch of basil
  • 2 tablespoons [30 mL] soy sauce
  • 1 tablespoon [15 mL] chili sauce
  • Pepper and salt, to taste
  • Preheat oven to 375°F [190°C].
  • Mix together all ingredients.
  • Evenly spoon mixture into a square greased oven-safe dish; cover dish.
  • Bake into preheated oven for approximately 60 minutes.
  • Leave to rest for 10 minutes, before serving.
