- 1 egg
- 2 tablespoons [30 g] butter, margarine or oil [30 mL]
- 1/3 cup [80 mL] brown sugar, sugar [75 g] or fructose
- 3 medium-size ripe bananas, crushed
- 1/3 cup [80 mL] freshly chopped nuts
- Pinch of salt
- 1/4 cup [60 mL] milk [2% m.s.g. or less]
- 1 cup [250 mL] whole wheat pastry flour
- 1 cup [140 g] sifted all-purpose or rye flour [250 mL]
- 2 teaspoons [10 mL] baking powder

- Preheat oven to 400°F [200°C].
- Beat together egg, butter, margarine or oil, brown sugar or sugar or fructose, crushed bananas, chopped nuts, salt and milk.
- Into a clean bowl, mix together whole wheat pastry flour, sifted all-purpose or rye flour, and baking powder.
- Add egg mixture to flour mixture; lightly stir, until smooth.
- Equally fill 12 lightly greased muffin tins with dough.
- Bake into preheated oven for approximately 15 to 20 minutes, until a toothpick comes out clean from the middle of muffins.
- Serve.
