Banana Muffins

  • 1 egg
  • 2 tablespoons [30 g] butter, margarine or oil [30 mL]
  • 1/3 cup [80 mL] brown sugar, sugar [75 g] or fructose
  • 3 medium-size ripe bananas, crushed
  • 1/3 cup [80 mL] freshly chopped nuts
  • Pinch of salt
  • 1/4 cup [60 mL] milk [2% m.s.g. or less]
  • 1 cup [250 mL] whole wheat pastry flour
  • 1 cup [140 g] sifted all-purpose or rye flour [250 mL]
  • 2 teaspoons [10 mL] baking powder
  • Preheat oven to 400°F [200°C].
  • Beat together egg, butter, margarine or oil, brown sugar or sugar or fructose, crushed bananas, chopped nuts, salt and milk.
  • Into a clean bowl, mix together whole wheat pastry flour, sifted all-purpose or rye flour, and baking powder.
  • Add egg mixture to flour mixture; lightly stir, until smooth.
  • Equally fill 12 lightly greased muffin tins with dough.
  • Bake into preheated oven for approximately 15 to 20 minutes, until a toothpick comes out clean from the middle of muffins.
  • Serve.
