Date or Prune Squares

  • 1 pound / 3 cups [454 g / 750 mL] stoned chopped dates or prunes
  • 1 1/3 cups [330 mL] water
  • 1 teaspoon [5 mL] lemon juice
  • 1 cup [250 mL] whole wheat pastry flour
  • 1 1/2 cups [375 mL] quick-cooking rolled oats
  • Pinch of salt
  • 1/4 cup [60 mL] brown sugar, sugar [60 g] or fructose
  • 2 tablespoons [30 g] butter, margarine or oil [30 mL]
  • 1/3 cup [80 mL] water
  • Preheat oven to 350°F [180°C].
  • Boil dates or prunes into 1 cup [250 mL] of the water over medium heat for approximately 15 minutes, until slightly thickened.
  • Remove from heat and stir in lemon juice.
  • Into a bowl, using a pastry cutter or two knifes, mix together pastry whole wheat flour, rolled oats, salt, brown sugar or sugar or fructose, butter or margarine or oil and water until evenly grossly crumbled.
  • Firmly press half of mixture over the bottom of a greased, oven-safe square pan.
  • Evenly spread date or prune mixture on top.
  • Top with remaining half of flour mixture; lightly press with your fingers, firmly yet avoiding crushing the mixture.
  • Bake into preheated oven for approximately 30 minutes.
  • Leave to cool completely, before cutting into 24 squares.
