- 1/3 pack [1 teaspoon / 2.3 g] unflavored gelatin
- 3 tablespoons [45 mL] water
- 2 tablespoons [30 mL] honey, brown sugar, sugar [30 g] or sucrose
- 2 cups [500 mL] strawberries, raspberries, blueberries or blackberries
- 1 tablespoon [15 mL] water
- 1 teaspoon [5 mL] grated lemon rind

- Sprinkle gelatin over water; leave to swell for approximately 5 minutes.
- Into a casserole, bring together honey, brown sugar, sugar or sucrose, fruits [strawberries, raspberries, blueberries or blackberries], water and grated lemon rind to a boil.
- Leave mixture to boil for 2 minutes.
- Crush fruits.
- Mix in swollen gelatin and cook for 2 minutes more.
- Evenly pour into jars.
- Refrigerate until set.
