Four [4] Different Fruit Jams

Cooking time: 4 minutes
Will keep for approximately 2 weeks, refrigerated.
Servings: 2 1/2 cups [375 mL], each
IngredientsPreparation
  • 1/3 pack [1 teaspoon / 2.3 g] unflavored gelatine
  • 3 tablespoons [45 mL] water
  • 2 tablespoons [30 mL] honey, brown sugar, sugar [30 g] or sucrose
  • 2 cups [500 mL] strawberries, raspberries, blueberries or blackberries
  • 1 tablespoon [15 mL] water
  • 1 teaspoon [5 mL] grated lemon rind
  • Sprinkle gelatine over water; leave to swell for approximately 5 minutes.
  • Into a casserole, bring together honey, brown sugar, sugar or sucrose, fruits [strawberries, raspberries, blueberries or blackberries], water and grated lemon rind to a boil.
  • Leave mixture to boil for 2 minutes.
  • Crush fruits.
  • Mix in swollen gelatine and cook for 2 minutes more.
  • Evenly pour into jars.
  • Refrigerate until set.
