  • 2 cups [500 mL] water
  • 2 cups [500 mL] raisins
  • 2 eggs
  • 2 tablespoons [30 mL] sugar substitute
  • 3/4 cup [190 mL] oil
  • 1 teaspoon [5 mL] baking soda
  • 2 cups [280 g] flour
  • 1 1/2 teaspoons [7.5 mL] cinnamon
  • 1 teaspoon [5 mL] vanilla
  • Preheat oven to 350°F [180°C].
  • Bring together water and raisins to a boil; leave to simmer until water has evaporated.
  • Transfer raisins into a bowl.
  • Well mix in eggs, sugar substitute, oil, baking soda, flour, cinnamon and vanilla.
  • Evenly pour into a square greased 8-inch [20-cm] cake pan.
  • Bake into preheated oven, for 20 minutes.
