- 2 cups [500 mL] water
- 2 cups [500 mL] raisins
- 2 eggs
- 2 tablespoons [30 mL] sugar substitute
- 3/4 cup [190 mL] oil
- 1 teaspoon [5 mL] baking soda
- 2 cups [280 g] flour
- 1 1/2 teaspoons [7.5 mL] cinnamon
- 1 teaspoon [5 mL] vanilla

- Preheat oven to 350°F [180°C].
- Bring together water and raisins to a boil; leave to simmer until water has evaporated.
- Transfer raisins into a bowl.
- Well mix in eggs, sugar substitute, oil, baking soda, flour, cinnamon and vanilla.
- Evenly pour into a square greased 8-inch [20-cm] cake pan.
- Bake into preheated oven, for 20 minutes.
