Sugar-Free Orange Bars [diabetic*]

  • 1 cup [250 mL] chopped dates
  • 1/4 cup [60 mL] sugar substitute
  • 1/3 cup [80 mL] oil
  • 1/2 cup [125 mL] orange juice
  • 1 egg
  • 1 cup [140 g] all-purpose flour
  • 1 1/2 teaspoons [7.5 mL] baking powder
  • 1/2 cup [125 mL] chopped pecans
  • 1 tablespoon [15 mL] grated orange rind
  • Into a casserole, mix together chopped dates, sugar substitute, oil and orange juice.
  • Cook together for 5 minutes, to soften dates; transfer into a bowl and leave to cool.
  • Preheat oven to 350°F [180°C].
  • Mix in egg.
  • Mix together flour, baking powder, choped pecans and grated orange rind into a clean bowl.
  • Mix into first mixture.
  • Pour into an 8-inch [20-cm] square cake pan.
  • Bake into preheated oven for 25 to 30 minutes.
  • Leave to cool completely, before cutting into bars.
