Sugar-Free Fruit Bars [diabetic*]

If desired, add 1/4 teaspoon [1 mL] cinnamon and 1/4 teaspoon [1 mL] nutmeg to the dough.
It is also possible to mix in 1/2 cup [125 mL] chopped nuts or grated coconut.

  • 1 cup [250 mL] water
  • 1/2 cup [125 mL] dates
  • 1/2 cup [125 mL] raisins
  • 1/2 cup [125 mL] pitted dried prunes
  • 1/2 cup [115 g] margarine
  • 3 eggs
  • 1 teaspoon [5 mL] vanilla
  • 1 cup [140 g] flour
  • 1/4 teaspoon [1 mL] salt
  • 1 teaspoon [5 mL] baking soda
  • Preheat oven to 350°F [180°C].
  • Chop dates, raisins and dried prunes.
  • Bring together water, chopped dried fruits and margarine to a boil.
  • Into a bowl, beat together eggs and vanilla; mix in already mixed together flour, salt and baking soda.
  • Mix into fruits mixture.
  • Pour into a 9-inch [23-cm] square cake pan.
  • Bake into preheated oven for 25 to 30 minutes.
  • Cut into bars to serve.
