  • 2/3 cup [150 g] margarine
  • 4 packs or 2 or 3 teaspoons [10 or 15 mL] sugar substitute
  • 2 eggs, whites and yolks separated
  • 1 cup [250 mL] crushed bananas
  • 1 1/2 cups [210 g] flour
  • 1 teaspoon [5 mL] baking soda
  • 1/4 teaspoon [1 mL] baking powder
  • 1/4 teaspoon [1 mL] salt
  • 1/4 cup [60 mL] sour cream
  • 1/2 teaspoon [2.5 mL] vanilla
  • 1/2 cup [125 mL] chopped nuts
  • Preheat oven to 350°F [180°C].
  • Cream together margarine and sugar substitute.
  • Well beat in egg yolks.
  • Mix in crushed bananas.
  • Sift together flour, baking soda, baking powder and salt.
  • Alternately with sour cream, mix dry ingredients into banana mixture until really well blended.
  • Whip egg whites until stiff.
  • Fold egg whites, vanilla and chopped nuts into dough.
  • Evenly spread into 2 [20 or 23-inch / 8 or 9-inch each] square cake pans.
  • Bake into preheated oven, for approximately 35 to 40 minutes.
  • Leave to cool before cutting into squares.
