- 2/3 cup [150 g] margarine
- 4 packs or 2 or 3 teaspoons [10 or 15 mL] sugar substitute
- 2 eggs, whites and yolks separated
- 1 cup [250 mL] crushed bananas
- 1 1/2 cups [210 g] flour
- 1 teaspoon [5 mL] baking soda
- 1/4 teaspoon [1 mL] baking powder
- 1/4 teaspoon [1 mL] salt
- 1/4 cup [60 mL] sour cream
- 1/2 teaspoon [2.5 mL] vanilla
- 1/2 cup [125 mL] chopped nuts

- Preheat oven to 350°F [180°C].
- Cream together margarine and sugar substitute.
- Well beat in egg yolks.
- Mix in crushed bananas.
- Sift together flour, baking soda, baking powder and salt.
- Alternately with sour cream, mix dry ingredients into banana mixture until really well blended.
- Whip egg whites until stiff.
- Fold egg whites, vanilla and chopped nuts into dough.
- Evenly spread into 2 [20 or 23-inch / 8 or 9-inch each] square cake pans.
- Bake into preheated oven, for approximately 35 to 40 minutes.
- Leave to cool before cutting into squares.
