Fruitcake
  • 1 cup [250 mL] mincemeat [mixed fruit pieces]
  • 1/3 cup [80 mL] fructose
  • 2 eggs
  • 1/4 cup [60 g] butter
  • 1 1/2 cups [210 g] flour
  • 1 1/2 teaspoons [7.5 mL] baking powder
  • 1 teaspoon [5 mL] baking soda
Orange Cream Cheese Frosting
  • 6 ounces [170 g] cream cheese
  • 2 tablespoons [30 mL] fructose
  • 2 tablespoons [30 mL] orange juice concentrate
  • Preheat oven to 350°F [180°C].
  • Mix together mincemeat and fructose.
  • Well beat eggs; melt butter.
  • Mix beaten eggs and melted butter into mincemeat mixture.
  • Sift together flour, baking powder and baking soda; well mix into first mixture.
  • Spoon dough into an oiled and flour 8-inch [20-cm] cake pan.
  • Bake into preheated oven, for approximately 25 minutes.
  • Leave to cool completely.
  • Well beat together all orange cream cheese frosting ingredients.
  • Frost top of cooled cake.
