Fruitcake
- 1 cup [250 mL] mincemeat [mixed fruit pieces]
- 1/3 cup [80 mL] fructose
- 2 eggs
- 1/4 cup [60 g] butter
- 1 1/2 cups [210 g] flour
- 1 1/2 teaspoons [7.5 mL] baking powder
- 1 teaspoon [5 mL] baking soda
Orange Cream Cheese Frosting
- 6 ounces [170 g] cream cheese
- 2 tablespoons [30 mL] fructose
- 2 tablespoons [30 mL] orange juice concentrate

- Preheat oven to 350°F [180°C].
- Mix together mincemeat and fructose.
- Well beat eggs; melt butter.
- Mix beaten eggs and melted butter into mincemeat mixture.
- Sift together flour, baking powder and baking soda; well mix into first mixture.
- Spoon dough into an oiled and flour 8-inch [20-cm] cake pan.
- Bake into preheated oven, for approximately 25 minutes.
- Leave to cool completely.
- Well beat together all orange cream cheese frosting ingredients.
- Frost top of cooled cake.
