  • 2 eggs, well beaten
  • 1 cup [250 mL] unsweetened applesauce
  • 1 1/2 cups [210 g] flour
  • 1 1/2 teaspoons [7.5 mL] baking soda
  • 1/2 cup [125 mL] chopped nuts
  • 1/2 cup [125 mL] raisins
  • 1/2 cup [115 g] butter, melted
  • 1/2 cup [125 mL] fructose
  • Preheat oven to 190°C [357°F].
  • Mix together beaten eggs and unsweetened applesauce.
  • Sift together flour and baking soda.
  • Mix chopped nuts and raisins into flour mixture.
  • Alternately with fructose, stir flour mixture into beaten eggs mixture.
  • Pour dough into a greased tube cake pan.
  • Bake into preheated oven, for 30 to 35 minutes.
  • Unmold onto a wire to cool completely before serving.
