- 2 eggs, well beaten
- 1 cup [250 mL] unsweetened applesauce
- 1 1/2 cups [210 g] flour
- 1 1/2 teaspoons [7.5 mL] baking soda
- 1/2 cup [125 mL] chopped nuts
- 1/2 cup [125 mL] raisins
- 1/2 cup [115 g] butter, melted
- 1/2 cup [125 mL] fructose

- Preheat oven to 190°C [357°F].
- Mix together beaten eggs and unsweetened applesauce.
- Sift together flour and baking soda.
- Mix chopped nuts and raisins into flour mixture.
- Alternately with fructose, stir flour mixture into beaten eggs mixture.
- Pour dough into a greased tube cake pan.
- Bake into preheated oven, for 30 to 35 minutes.
- Unmold onto a wire to cool completely before serving.
