- 1 cup [250 mL] rice
- 1 cup [250 mL] water
- 1 cup [250 mL] orange juice
- 1 teaspoon [5 mL] low-calorie margarine
- 1 pinch salt
- 1 tablespoon [15 mL] freshly grated orange rind
- 1/2 cup [125 mL] seeded orange pieces

- Into an 8-cup [2-L] bowl, mix together rice, water, orange juice, margarine and salt.
- Cover and microwave on 'HIGH for 5 minutes.
- Mix in grated orange rind.
- Cover and microwave on 'HIGH' for 10 minutes more, stirring after 5 minutes.
- Leave to rest, covered for approximately 10 minutes, until all of the liquid has been absorbed.
- Mix using a fork until fluffy before delicately mixing in orange pieces, and serve.
