Orange Rice [microwave]

  • 1 cup [250 mL] rice
  • 1 cup [250 mL] water
  • 1 cup [250 mL] orange juice
  • 1 teaspoon [5 mL] low-calorie margarine
  • 1 pinch salt
  • 1 tablespoon [15 mL] freshly grated orange rind
  • 1/2 cup [125 mL] seeded orange pieces
  • Into an 8-cup [2-L] bowl, mix together rice, water, orange juice, margarine and salt.
  • Cover and microwave on 'HIGH for 5 minutes.
  • Mix in grated orange rind.
  • Cover and microwave on 'HIGH' for 10 minutes more, stirring after 5 minutes.
  • Leave to rest, covered for approximately 10 minutes, until all of the liquid has been absorbed.
  • Mix using a fork until fluffy before delicately mixing in orange pieces, and serve.
