Oriental Kaki or Shizi Ice Cream
Comments: Kaki or shizi: large Japanese kaki [type of persimmons].
Servings: Approximately 4 cups [1 L]
  • 4 or 5 large Oriental kakis
  • 3 tablespoons [45 g] sugar
  • 6 tablespoons [90 mL] freshly squeezed lemon juice
  • 2 cups [500 mL] whipping cream
  • Rinse then pat dry Oriental kakis; press kakis through a potato ricer.
  • Mix in sugar and lemon juice.
  • Whip cream until wuite thick; fold whipped cream into first mixture.
  • Evenly spread mixture, into metal ice cube containers after removing separations, or a mold.
  • Freeze mixture until hardened, before serving.
