Strawberry Sherbet [juice extractor]

  • 2 cups [500 mL] fresh strawberries, hulled
  • 1/4 cup [60 g] sugar
  • 2 egg whites, at room temperature
  • Process strawberries in juice extractor.
  • Combine juice and sugar.
  • Pour mixture into an ice tray; freeze until lightly frozen.
  • Beat egg whites until stiff peaks form.
  • Fold in partially frozen strawberry mixture.
  • Pour back into ice tray.
  • Freeze until set, for approximately 2 hours.
