Fresh Strawberry Sherbet [juice extractor]

  • 2 cups [500 mL] rinsed hulled fresh strawberries
  • 1/4 cup [60 g] sugar
  • 2 egg whites, at room temperature
  • Process strawberries in juice extractor.
  • Combine strawberry juice and sugar.
  • Pour into an ice tray; freeze until lightly frozen.
  • Into a bold, beat egg whites until stiff peaks form.
  • Fold partially frozne mixture into beaten egg whites.
  • Evenly spoon into ice tray.
  • Freeze until set, for approximately 2 hours.
  • Keep and serve frozen.
