Comments: This recipe is for a manual ice cream maker.
As a general rule , quantities can vary and, if you want to add salt, 1/8 teaspoon [0.5 mL] is plenty; add less sugar if desired.
When ice cream is ready, its volume will have increased by approximately 25%.

  • 2 eggs
  • 1/2 cup [100 g] sugar
  • 1 3/4 cups [440 mL] milk
  • 2 cups [500 mL] cream
  • 2 teaspoons [10 mL] vanilla
Recipe 2
  • 1 egg
  • 1/3 cup [75 g] sugar
  • 3/4 cup [190 mL] milk
  • 3/4 cup [190 mL] cream
  • 1 teaspoon [5 mL] vanilla
  • For recipe 1 or 2, beat together egg[s] and sugar until thick and of cream color.
  • Well mix in milk, cream and vanilla.
  • Pour mixture into ice cream maker cylinder.
  • Refrigerate overnight before processing, or process immediately following manufacturer's instructions.
