Mint Cucumber Slices

  • 14 ounces [400 g] cucumbers
  • 1 small container plain yogurt
  • 1 tablespoon [15 mL] freshly minced mint
  • Pepper, to taste
  • Freshly chopped parsley, to serve
  • Rince then peel cucumbers; slices then arrange cucumber slices into a large glass bowl.
  • Into a small bowl, mix together plain yogurt and freshly minced mint; pepper mixture.
  • Without stirring, evenly spoon yogurt mixture over cucumber slices.
  • Refrigerate until ready to serve.
  • Just before serving, mix together cucumber slices and yogurt mixture.
  • Serve really cold, sprinkled with freshly chopped parsley.
