- 14 ounces [400 g] cucumbers
- 1 small container plain yogurt
- 1 tablespoon [15 mL] freshly minced mint
- Pepper, to taste
- Freshly chopped parsley, to serve

- Rince then peel cucumbers; slices then arrange cucumber slices into a large glass bowl.
- Into a small bowl, mix together plain yogurt and freshly minced mint; pepper mixture.
- Without stirring, evenly spoon yogurt mixture over cucumber slices.
- Refrigerate until ready to serve.
- Just before serving, mix together cucumber slices and yogurt mixture.
- Serve really cold, sprinkled with freshly chopped parsley.
