- 2 tablespoons [30 mL] oil
- 1 3/4 ounces [50 g] chopped onion
- 3 garlic cloves, crushed
- 8 3/4 ounces [250 g] boiled spinach, well drained
- 17 1/2 ounces [500 g] mashed potatoes
- 1/4 cup - 1 1/2 teaspoons [20 g] flour
- Nutmeg, to taste
- Pepper, to taste
- Hot frying oil

- Heat oil into a casserole; brown together chopped onion and crushed garlic.
- Mix in well drained spinach and mashed potato; season mixture with nutmeg and pepper.
- Beat until smooth.
- Remove from heat and set aside until lukewarm.
- Meanwhile, preheat some oil into a deep-fryer.
- Then shape mixture into 8 equal-size patties.
- Well coat patties with flour.
- Deep-fry patties into hot oil for 2 to 3 minutes, until golden.
- Serve immediately.
