Mint Fresh Green Peas

  • 4 cups [1 L] water
  • Few fresh mint leaves
  • 28 1/4 ounces [800 g] freshly shelled green peas
  • 2 tablespoons [30 g] margarine
  • Few leaves lettuce, rinsed then wiped dried
  • 1 tablespoon [15 mL] freshly snipped mint
  • Pepper, to taste
  • Bring water, lightly sprinkled with pepper, to a boil.
  • As soon as water is boiling, add fresh mint leaves then freshly shelled green peas.
  • Leave to boil for approximately 20 minutes, until done; then drain peas.
  • Melt margarine into a medium-size casserole; mix in wiped dried lettuce leaves and drained peas.
  • Mix and leave to simmer for 10 minutes.
  • Serve green peas, sprinkled with freshly snipped mint.
