- 4 cups [1 L] water
- Few fresh mint leaves
- 28 1/4 ounces [800 g] freshly shelled green peas
- 2 tablespoons [30 g] margarine
- Few leaves lettuce, rinsed then wiped dried
- 1 tablespoon [15 mL] freshly snipped mint
- Pepper, to taste

- Bring water, lightly sprinkled with pepper, to a boil.
- As soon as water is boiling, add fresh mint leaves then freshly shelled green peas.
- Leave to boil for approximately 20 minutes, until done; then drain peas.
- Melt margarine into a medium-size casserole; mix in wiped dried lettuce leaves and drained peas.
- Mix and leave to simmer for 10 minutes.
- Serve green peas, sprinkled with freshly snipped mint.
