Saffron Potatoes

  • 1 3/4 pounds [800 g] potatoes
  • 1 tablespoon [15 mL] oil
  • 3 1/2 ounces [100 g] minced onion
  • 1 cup [250 mL] white wine
  • 1 cup [250 mL] water
  • Pepper, to taste
  • 2 pinches saffron
  • Freshly chopped parsley [to serve]
  • Rinse, peel then slice potatoes.
  • Heat oil into a casserole; melt minced onion into hot oil until translucent.
  • Add potato slices.
  • Pour in white wine and water.
  • Pepper, then sprinkle mixture with saffron; mix well.
  • Cover and simmer for approximately 35 minutes, until potato slices are done.
  • Serve potato slices, sprinkled with chopped parsley.
