- 1 3/4 pounds [800 g] potatoes
- 1 tablespoon [15 mL] oil
- 3 1/2 ounces [100 g] minced onion
- 1 cup [250 mL] white wine
- 1 cup [250 mL] water
- Pepper, to taste
- 2 pinches saffron
- Freshly chopped parsley [to serve]

- Rinse, peel then slice potatoes.
- Heat oil into a casserole; melt minced onion into hot oil until translucent.
- Add potato slices.
- Pour in white wine and water.
- Pepper, then sprinkle mixture with saffron; mix well.
- Cover and simmer for approximately 35 minutes, until potato slices are done.
- Serve potato slices, sprinkled with chopped parsley.
