- 2 pounds [1 kg] potatoes
- 3 eggs, beaten
- 1/2 teaspoon [2.5 mL] nutmeg
- 2 teaspoons [10 mL] chopped parsley
- 1/4 cup + 2 teaspoons [80 g] butter
- 12 sage leaves
- Pepper, to taste

- Peel and rinse potatoes.
- Boil potatoes into lightly peppered water for 20 to 25 minutes.
- Drain then press potatoes through a sieve.
- Mix in beaten eggs, nutmeg and chopped parsley.
- Shape potato mixture into approximately 9 patties.
- Melt butter into a frypan.
- Brown potato patties until golden, for 10 minutes on each side.
- Add sage leaves and leave to cook for a few minutes; throw away sage leaves.
- Serve, really hot.
