Vegetables Risotto

IngredientsPreparation
  • 4 teaspoons [20 mL] oil
  • 1 onion, minced
  • 8 3/4 ounces [250 g] button mushrooms, cleaned then minced
  • 5 garlic cloves, crushed
  • 1 3/4 ounces [50 g] carrot slices
  • 1 3/4 ounces [50 g] leek strips
  • 7 ounces [200 g] long grain rice
  • Pepper, to taste
  • Water
  • Freshly chopped parsley, to serve
  • Brown minced onion into hot oil.
  • Mix in minced mushrooms, crushed garlic, carrot slices dans leek strips.
  • Pepper and pour a little water over vegetables.
  • Cover and simmer vegetables for 20 to 25 minutes.
  • Meanwhile, boil rice into boiling water for 15 to 20 minutes; drain.
  • Transfer drained boiled rice into a ring mold.
  • Really well press then unmold rice onto a serving plate.
  • Arrange mixed vegetable pieces into the centre of the ring.
  • Sprinkle all over with freshly chopped parsley, and serve.
