- 4 teaspoons [20 mL] oil
- 1 onion, minced
- 8 3/4 ounces [250 g] button mushrooms, cleaned then minced
- 5 garlic cloves, crushed
- 1 3/4 ounces [50 g] carrot slices
- 1 3/4 ounces [50 g] leek strips
- 7 ounces [200 g] long grain rice
- Pepper, to taste
- Water
- Freshly chopped parsley, to serve

- Brown minced onion into hot oil.
- Mix in minced mushrooms, crushed garlic, carrot slices dans leek strips.
- Pepper and pour a little water over vegetables.
- Cover and simmer vegetables for 20 to 25 minutes.
- Meanwhile, boil rice into boiling water for 15 to 20 minutes; drain.
- Transfer drained boiled rice into a ring mold.
- Really well press then unmold rice onto a serving plate.
- Arrange mixed vegetable pieces into the centre of the ring.
- Sprinkle all over with freshly chopped parsley, and serve.
