Almond Rice Curry

  • 10 1/2 ounces [300 g] rice grains
  • 1 teaspoon [5 mL] ground ginger
  • 2 teaspoons [10 mL] curry powder
  • Juice of 1 lemon
  • 1 tablespoon [15 mL] oil
  • 3 1/2 ounces [100 g] golden fried slivered almonds
  • Pepper, to taste
  • Boil rice into lightly peppered boiling water until almost all of water has been absorbed.
  • Well mix in ginger, curry powder and lemon juice.
  • Dry-out rice over low heat into hot oil.
  • Serve rice into a deep serving bowl, sprinkled with golden fried slivered almonds.
